Yukiguni Maitake's innovative technology allows maitake to be grown in an artificial environment that simulates conditions in the deep mountains and dark valleys that are the mushroom's natural home. Actual growing takes place at a compound five and half times larger in area than the Tokyo Dome. Conditions within the compound are strictly controlled by an advanced cultivation system that monitors temperature, humidity, illumination, ventilation, and other environmental variables. Combining the best of agricultural and industrial technologies, the system is truly a model for 21st century agricultural production techniques. Daily production now amounts to 110 tons, enabling Yukiguni Maitake to serve over 70% of the domestic market. And we are continuing to expand production, with the hope of bringing Yukiguni Maitake products to people around the world.

1. Preparation
The growing medium used to grow our mushrooms is a mixture of selected sawdust from decidious trees, water, wheat bran, and other natural materials. The Yukiguni process eliminates the use of manures and other undesirable materials.
2. Sterilization
Once prepared, the growing medium is subjected to high temperature and high pressure to remove bacteria.
3. Mycelium
The maitake mycelium - the source for mushrooms - is planted in the growing medium under rigorous cleanroom conditions.
4. Cultivation
Once the mycelium is implanted in the growing medium, the mushrooms grow under carefully controlled conditions. Atmospheric conditions including temperature, humidity, and ventilation, are precisely monitored.
5. Cover cutting
Once the baby mushrooms reach a certain height, the plastic film covering the growing medium is cut away to allow them to grow naturally.
6. Growth facilitation
As growth proceeds, the baby mushrooms are moved to a special "growth chamber" to facilitate further growth.
7. Harvesting
Finally, after spending approximately fifteen days in the growth chamber, the now-mature mushrooms are ready for harvesting.
8. Wrapping
Once harvested, all products are immediately wrapped according to strict freshness standards.
9. Delivery
After being wrapped, the mushrooms are promptly dispatched to clients all over Japan, using company trucks and other modes of transportation.
