Maitakes are delicate mushrooms which can be affected by environmental changes in temperature, humidity, light, and air currents. Using their own natural four-season deep-mountain environment as a model, we created a controlled environment to raise these mushrooms in what is known as a biofarm. This production plant made possible what was previously considered impossible “the cultivation of the Maitake mushroom”. Our process includes the hot deep-mountain summer that creates the fungi, as well as the long autumn that promotes growth. The latest technology and knowledge we have gleaned from nature has allowed us to recreate an original form of biotechnology, which gives rise to a high quality product and short production time.

Our goal is to improve our overall operation through our original technology, automation, hygiene, and efficiency until we have no equal.  We are striving to be the number one mushroom producer with the highest quality, most reliable product on the market.

The Maitake Production Process

  

1. We have created a natural environment inside our plant capable of cultivating a Maitake product that is unequaled anywhere else in the world.

2. Our large cultivation area is where our original management technology maintains a constant environment.

3. We carry out strict quality control checks at all of our plants. We guarantee a safe and consistent product.

4. Using our original form of management “know how”, we have achieved production of mushrooms using less water, bringing our customers a product of unequaled flavor, texture and freshness.

     

    

1. Inspection of raw material

The water which is the basis of our cultivation process is carefully inspected. We have developed equipment that monitors the cultivation process from start to finish. We carry out strict quality and product control inspections.

  

2. Preparation

The growing medium used to cultivate our mushrooms is a mixture of selected sawdusts from deciduous trees, water, wheat bran, and other natural materials. The medium contained in the growing bag ensures a high quality Maitake product.  No manure or artificial insecticides are used.

 

3. Sterilization

In order to create a bacteria free environment, the bacillus is pressurized and kept at a high temperature. The sterile product is then moved to the clean room where the temperature is reduced.

   

4. Inoculation

In order to prevent intermixing, the Maitake mushroom mycelium is grown in a culture medium in the clean room.

   

4. Cultivation

Once moved into the cultivation area the process continues with carefully controlled temperature, humidity, and air currents. Natural Maitake mushrooms propagate most during summer. Because of this, we keep the cultivation area in the same environmental conditions one would find deep in the mountains during summer all year long.

 

5. Budding

Once the mushrooms begin to develop shoots, we open the plastic film covering them to allow them to grow naturally.

  

7. Flushing

The growth room recreates the environment of the deep-mountains in the fall. It is in this room that the environmental control has greatest influence on the quality and the harvest.

  

8. Harvesting

In order to supply our customers with the highest quality Maitake mushrooms, all of our fresh products are picked by hand and inspected.
